Good restaurants are hard to find around rural North Dakota. For Parshall, great food and friendly service can now be found just around the corner on Main Street at a new restaurant, CJ’s Café.
The café, formerly known as the Redwood, opened its doors late last month under new ownership. Since then hundreds of hungry customers have flooded in to try out their fresh home-style cooking.
The restaurant is co-owned by Pete Coffey II, Pete Coffey III, and Chris Jaynes.
They came up with the idea nearly three years ago. They purchased the old Mountrail County Record building and then sold it to the Business Development Corporation, this gave them the money to jump start the project.
They secured the lease from the Development Corp. after the previous owners closed the restaurant down in June. Since then the Coffeys and Jaynes have remodeled and put in new equipment.
CJ’s currently has one refrigerator and is in the process of getting a new one. This new walk-in fridge will allow them to store more food as well as an increased variety.
Head cook Jayne built the menu the café currently uses. Jaynes has a two-year certificate from The Los Angeles Trade Technical College in Culinary Arts.
Coffey holds high respect for Jaynes’ culinary skills.
“Chris makes everything from scratch, he doesn’t use measurements from what I can see, [Chris] makes everything from taste,” Coffey said.
