Cafe offers tastes of Mexico

By CHERYL ODDEN

Those who enjoy authentic Mexican food likely don’t think to dine in Makoti, North Dakota. That could be a big mistake.

Fatimalulu’s Restaurant, a Main Street eatery, has been getting rave reviews since it opened April 12 in the former Makoti Cafe building.

The idea to open a restaurant in North Dakota blossomed when Lourdes (Lulu) Vega suggested the idea to her niece, Fatima Cardenas.

At the time, Lulu, her husband Alberto, and Fatima’s husband, Ernesto Cardenas, had been living in Plaza. As employees of Gold Star Productions, the men often work long hours doing prep work for oil rigs.

Lulu began to dream about opening a Mexican restaurant "somewhere" in North Dakota.

During a trip to the state of Washington late January, she shared her thoughts with Fatima. That’s all it took to put the entrepreneurial wheels into motion. Intrigued with the possibilities, Fatima agreed and quickly made plans for herself and her three children to join her husband in Plaza.
