No lounging around for this Grille manager

Great customer service with a friendly smile. That’s how Underwood Grille and Lounge manager Glenda Earl turned around the struggling small-town restaurant in about six months. Glenda had just decided to quit her job as a waitress at the restaurant last November when she was approached about taking on the manager duties. The restaurant had been struggling with managerial and staffing issues, and she was ready to hang it up. “I was planning on being done, and they said, ‘how about we throw the manager position at you and we clean house’,” recalled Earl. She said ‘yes’ to the challenge, and she started cleaning house, literally, by cleaning the kitchen from top to bottom, and figuratively, by starting from scratch with a new staff. “I said, if I’m going to do it, we have to start fresh, a clean slate,” she said. “I think we hired four people in that first week that I started and kind of rolled with it.”
